I have been mentioning to my ladies in India for years now- “you will come to realise there is never too much sparkle!” It is always wonderful to watch as a tour unfolds how the search for the perfect sparkly bangle – or ANOTHER sparkly bangle and perhaps a diaphanous scarf takes on such importance. Vietnam is an exciting dynamic place- so welcoming and exciting to explore. These are a People who have had a long history of foreigners dropping by for a visit. Now you will feel a very welcomed visitor but it was not always so…and over the past few millennium they have discovered because of the difficulties some of these visitors have caused-to survive nearly anything can be eaten –if you sauce it right!
Generally Vietnamese food is delicate combinations of textures and flavours with an emphasis on fresh abundance. Your biggest problem is not to burst from the wonderful banquets served up at every meal and Khanh our Vietnamese host likes to try and offer enough food… you have already loosened your pants and are wondering what it will look like when your eyes pop! To a good Aussie you can’t go past ‘dead horse’ [tomato sauce] as an accompaniment to almost everything- ask my sons. In Vietnam that pride of place is held by Noc Cham- dip your spring rolls into it, sprinkle it over salads, it is so delightful I am sure you could even dap it behind your ears!
3-6 fresh red chilli 2 garlic cloves---grind in mortar and pestle Add 7 Tablespoons fish sauce 7 Tablespoons sugar 7 Tablespoons water Juice 1 lemon or lime Stir together and sprinkle over everything.
NOTE a good noc cham has the chilli and garlic floating on the top…all prospective mother-in-laws like to see a prospective bride has mastered a good noc cham so they know their son won’t starve.

During our textile tours in India we often get a chance to visit a family of printers who work in Natural Dyes- one highlight is always the indigo vat- it has a mysterious metallic blue surface- the cloth comes out a dull green and in front of your very eyes turns a rich deep blue- very cool! That is how Kerala labels itself! I thought upon arrival -what a big name to live up to… yet by time you arrival at your first night’s accommodation…wander down to the back waters, or watch the sun set over the Indian Ocean… you start to think they might have something…. By the time a few days later you laze along on your converted rice barge houseboat being fed by your own private chef perhaps stopping for seafood for dinner- so fresh that is just now coming out of the water you are pretty well convinced- no exaggeration at all!
